Heather's Homemade Mashed Potatoes

     Prep time : 45 minutes
     Makes about 4 servings

     Ingredients:
     2 pounds Red Potatoes, cleaned with the skin on
     5 oz Cream Cheese
     1/2 cup Chicken Stock (See my recipe for my homemade, fragrant chicken stock)
     1/2 cup Butter
     1 tbsp Salt
     1 tbsp Pepper
     Plus:
     1 tbsp oil and a pinch of salt for boiling potatoes

     Bring about 6 to 8 cups of water to a rapid boil with oil and salt in a large quart pot.
     Clean and quarter Red Potatoes leaving skin on.  Place quartered potatoes in boiling water and 
     cook for 20 min.  Drain and return to pot and add cream cheese, chicken stock, butter, salt and 
     pepper.  Use a hand masher (important!) to mash all ingredients together, this will give the best            consistency and taste.  Stir ingredients together and continue to mash until a super creamy                    consistency is formed.  Add more salt and pepper to taste if necessary.  If potatoes are too thick for      your liking, add 1 tbsp at a time of stock until desired consistency is achieved. Serve hot and                enjoy!
