Heather's Homemade Fried Rice

Prep time 2 to 4 hours, makes roughly 4 to 6 servings

Ingredients:
1, 2 to 3 pound pork loin
2 cups Korean BBQ Sauce, I use Bibigo Brand(use whole jar if basting)
2 cups prepared white rice, I use parboiled because I like the Al Dente consistency
2 eggs
1 1/2 cups of frozen peas
3 small carrots, chopped
1 small yellow onion, chopped
1/4 cup soy sauce
2 Tbls oil

Preheat oven to 400 F.
Clean pork loin and place in a deep bowl and pour Korean BBQ Sauce over and let marinade for at least 1 to 4 hours in the fridge. The longer you marinade the pork, the more flavorful and tender it will be. If you are doubling up the recipe with a larger pork loin, marinade overnight for best results. Place loin in a hot, cast iron skillet and brown on all sides, then place in oven on the center rack and roast for about an hour, turning skillet clockwise every 15 min. ( Adjust cooking times for smaller or larger pork loins) If the edges of the pork begin to burn, add small amounts of stock or water to skillet and baste. Tip: pour all of the BBQ sauce from the marinade on the pork while its in the oven and baste often for best flavor.
Prepare white rice to desired consistency. I like to boil all of the water out on high heat then remove from heat and allow the steam to continue to cook the rice completely, this gives the rice a nice, al dente consistency. Once rice is done, spread out on a plate or in a large bowl to cool.
Beat the 2 eggs, pour into a non-stick skillet and allow to cook until the egg is the consistency of an omelet without disrupting the egg. Set aside when done.
In a large skillet or frying pan, heat oil on medium heat and add chopped carrot and chopped onion and allow to cook until tender, then add frozen peas. Allow to cook until tender while keeping carrots slightly crunchy, and keep on low heat until pork loin is finished.
Once pork loin is done, allow to rest for 10 minutes, then cut up pork into small, bite size pieces.
Cut egg into strips or small pieces, whichever you prefer and add to vegetables along with the white rice and soy sauce. Turn heat back to medium and add pork. Mix until everything is hot and serve!
